  • Lemon1, juiced
  • Olive Oil3 tbsp
  • Cucumber1
  • Red Onion1
  • Feta Cheese200 g
  • Fresh Dillhandful, torn
  • Butter Beans2 cans

Instructions

    Whisk the lemon juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the butter beans — slice, shred or cube it so every forkful gets some.

    Toss the butter beans with the onion, fresh dill and the dressing just before serving.
