Marinated octopus in lemon and oregano oil — ready cold, better the next day. About 15 minutes from fridge to table.

Ingredients

- Onion1/2, thinly sliced
- Lemon1, juiced
- Olive Oil3 tbsp
- Dried Oregano1 tsp
- Octopus400 g
- Fresh Dillhandful, torn
Instructions

Whisk the lemon juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the octopus — slice, shred or cube it so every forkful gets some.

Toss the octopus with the onion, fresh dill and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lemon if it needs lift.
Chef's tip
For deeper flavour, toast the dried oregano in the oil before adding anything wet.
