Spinach Skordalia

Smooth and savoury: spinach whipped with oil and lemon into the ultimate sharing plate. 10 minutes of mostly hands-off cooking.

Ingredients

  • Saltto taste
  • Spinach300 g
  • Garlic2 cloves, grated
  • Potato3, boiled
  • Lemon1/2, juiced
  • Olive Oil3 tbsp, good and fruity
  • Dried Oregano1/2 tsp

Optional extras

  • Fresh Dillhandful, to finish

Instructions

    Prepare the spinach — roast, boil or mash it depending on what it is, until completely soft.

    Beat it smooth with the olive oil, adding it in a slow stream for a silky texture.

    Season with the garlic, lemon juice, dried oregano and salt — taste as you go.

    Swoosh onto a plate with a spoon-back of oil, a sprinkle of fresh dill, and serve with warm bread.

Chef's tip

For deeper flavour, toast the dried oregano in the oil before adding anything wet.
