A bright, herb-packed spanish salad where pork meets a punchy dressing — fresh, loud and addictive. 20 minutes of mostly hands-off cooking.

Ingredients

  • Saltto taste
  • Onion1/2, thinly sliced
  • Tomato4
  • Olive Oil3 tbsp
  • Fresh Parsleyhandful, torn
  • Cucumber1
  • Pork500 g
  • Sherry Vinegar1, juiced

Instructions

    Whisk the sherry vinegar juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the pork — slice, shred or cube it so every forkful gets some.

    Toss the pork with the onion, fresh parsley and the dressing just before serving.

    Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of sherry vinegar if it needs lift.
