A bright, herb-packed spanish salad where spinach meets a punchy dressing — fresh, loud and addictive. About 15 minutes from fridge to table.

- Fresh Parsleyhandful, torn

- Sherry Vinegar1, juiced

Whisk the sherry vinegar juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the spinach — slice, shred or cube it so every forkful gets some.

Toss the spinach with the onion, fresh parsley and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of sherry vinegar if it needs lift.
