Squid Tapas

From a wide Spanish pan: seared Squid, a patient sofrito base, and a gentle simmer that leaves every piece glossed in deep, paprika-scented sauce.

Ingredients

  • Saltto taste
  • Garlic4 cloves, minced
  • Bell Pepper1, sliced
  • Tomato Sauce2 tbsp
  • Olive Oil2 tbsp
  • Spring Onions3, cut into batons
  • Squid400 g, rings
  • Smoked Paprika1 tsp
  • Breadto serve

Optional extras

  • Fresh Parsleyhandful, to finish

Instructions

    Heat the oil in a heavy pan and start the sofrito: Garlic cooked down gently until sweet and jammy.

    Add the Squid and brown it properly — in batches if the pan is crowded.

    Stir in Smoked Paprika, garlic and paprika, frying briefly until fragrant.

    Pour in the liquid, scrape the pan base (never let it burn — fond is flavour, char is ruin), and bring to a simmer.

    Cook uncovered until the Squid is tender and the sauce is deep amber and spoon-coating.

    Rest, then serve with lemon and a scatter of parsley, pan juices pooled generously.

Chef's tip

Let the dish rest 5 minutes off the heat before serving so the flavours settle.
