
Padron Peppers Tapas
High heat, big flavour: padron peppers seared with aromatics and a shiny sauce that clings to every bite. 17 minutes of mostly hands-off cooking.
Ingredients
- Saltto taste
- Garlic4 cloves, minced
- Bell Pepper1, sliced
- Tomato Sauce2 tbsp
- Olive Oil2 tbsp
- Spring Onions3, cut into batons
- Smoked Paprika1 tsp
- Padron Peppers300 g
- Breadto serve

- Fresh Parsleyhandful, to finish
Instructions

Heat the oil in a heavy pan and start the sofrito: Garlic cooked down gently until sweet and jammy.

Add the Padron Peppers and brown it properly — in batches if the pan is crowded.

Stir in Smoked Paprika, garlic and paprika, frying briefly until fragrant.

Pour in the liquid, scrape the pan base (never let it burn — fond is flavour, char is ruin), and bring to a simmer.

Cook uncovered until the Padron Peppers is tender and the sauce is deep amber and spoon-coating.

Rest, then serve with lemon and a scatter of parsley, pan juices pooled generously.
Chef's tip
Let the dish rest 5 minutes off the heat before serving so the flavours settle.
