
Rabbit a la Plancha
Smoky grilled rabbit with a bright marinade — charred edges, juicy centre, and a squeeze of sherry vinegar to finish. Ready in 32 minutes including prep.
Ingredients
- Salt1 tsp
- Garlic3 cloves, crushed
- Lemon1
- Olive Oil2 tbsp
- Fresh Parsley1 handful
- Smoked Paprika1 tsp
- Rabbit600 g, pieces
- Sherry Vinegar1, juiced
- Sea Salt1 tsp
Instructions

Whisk the Olive Oil, sherry vinegar juice, garlic, smoked paprika and salt into a quick marinade.

Coat the rabbit completely and let it sit for at least 20 minutes (overnight is even better).

Get the grill or griddle pan screaming hot.

Grill the rabbit in a single layer, turning once, until charred in spots and cooked through.

Rest for 5 minutes, then finish with fresh parsley and extra sherry vinegar.
Chef's tip
Don't move the rabbit for the first 3 minutes; a proper crust releases itself.
