Smoky grilled salt cod with a bright marinade — charred edges, juicy centre, and a squeeze of sherry vinegar to finish. Ready in 19 minutes including prep.

Ingredients
- Salt1 tsp
- Garlic3 cloves, crushed
- Lemon1
- Olive Oil2 tbsp
- Fresh Parsley1 handful
- Smoked Paprika1 tsp
- Salt Cod500 g, soaked
- Sherry Vinegar1, juiced
- Sea Salt1 tsp
Instructions

Whisk the Olive Oil, sherry vinegar juice, garlic, smoked paprika and salt into a quick marinade.

Coat the salt cod completely and let it sit for at least 20 minutes (overnight is even better).

Get the grill or griddle pan screaming hot.

Grill the salt cod in a single layer, turning once, until charred in spots and cooked through.

Rest for 5 minutes, then finish with fresh parsley and extra sherry vinegar.
Chef's tip
Don't move the salt cod for the first 3 minutes; a proper crust releases itself.
