
Chicken Romesco
Smoky grilled chicken with a bright marinade — charred edges, juicy centre, and a squeeze of sherry vinegar to finish. About 32 minutes from fridge to table.
Ingredients
- Chicken500 g, thighs
- Salt1 tsp
- Garlic3 cloves, crushed
- Olive Oil2 tbsp
- Almonds80 g
- Smoked Paprika1 tsp
- Sherry Vinegar1, juiced
- Roasted Red Peppers2
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Whisk the Olive Oil, sherry vinegar juice, garlic, smoked paprika and salt into a quick marinade.

Coat the chicken completely and let it sit for at least 20 minutes (overnight is even better).

Get the grill or griddle pan screaming hot.

Grill the chicken in a single layer, turning once, until charred in spots and cooked through.

Rest for 5 minutes, then finish with fresh parsley and extra sherry vinegar.
Chef's tip
Don't move the chicken for the first 3 minutes; a proper crust releases itself.
