Clams kissed by the grill, marinated the spanish way until the smoke and spice do all the talking. 19 minutes of mostly hands-off cooking.

Ingredients

  • Salt1 tsp
  • Garlic3 cloves, crushed
  • Olive Oil2 tbsp
  • Clams800 g
  • Almonds80 g
  • Smoked Paprika1 tsp
  • Sherry Vinegar1, juiced
  • Roasted Red Peppers2

Optional extras

  • Fresh Parsleyhandful, to finish

Instructions

    Whisk the Olive Oil, sherry vinegar juice, garlic, smoked paprika and salt into a quick marinade.

    Coat the clams completely and let it sit for at least 20 minutes (overnight is even better).

    Get the grill or griddle pan screaming hot.

  4. 4

    Grill the clams in a single layer, turning once, until charred in spots and cooked through.

  5. 5

    Rest for 5 minutes, then finish with fresh parsley and extra sherry vinegar.

Chef's tip

Don't move the clams for the first 3 minutes; a proper crust releases itself.
