Spinach Empanada Gallega

An oven-born spanish classic — spinach under a savoury crust that crackles when served. 48 minutes of mostly hands-off cooking.

Ingredients
- Heavy Cream200 ml
- Saltto taste
- Spinach300 g
- Onion1, sliced into rings
- Bell Pepper2
- Tomato Sauce200 ml
- Olive Oil1 tbsp, for the dish
- All-Purpose Flour400 g
- Cheese100 g, grated
- Smoked Paprika1 tsp
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Heat the oven to 190°C and butter or oil a baking dish.

Layer the onion over the base, season, then nestle in the spinach.

Pour the cream around the edges, scatter over the cheese and the smoked paprika.

Bake for 30-35 minutes until bubbling at the rim and burnished on top.

Rest for 5 minutes so it sets, then spoon out with the pan juices and plenty of black pepper.
