
Padron Peppers a la Sidra
Asturian-style — padron peppers simmered in dry cider with apple until glossy and tender. 60 minutes of mostly hands-off cooking.
Ingredients

- Onion2, halved and sliced
- Garlic4 cloves, crushed
- Olive Oil2 tbsp
- Bay Leaf2
- Stock or Broth500 ml
- Smoked Paprika1 tsp
- Padron Peppers300 g
- Dry Cider400 ml
- Apple2

Brown the padron peppers deeply in the Olive Oil in a heavy pot — patience here pays off later.

Remove it, then let the onion and garlic soften in the drippings with the smoked paprika.

Return the padron peppers, add the stock and bay leaves, and bring to the gentlest simmer.

Cover and braise low and slow until the padron peppers yields to a spoon, about 45 minutes.

Skim the fat, reduce the sauce to a glaze, and serve with something starchy to catch every drop.

Skim the fat from the surface before the final reduction for a cleaner sauce.
