Squid Pinchos

Fire-kissed skewers of squid — smoky outside, juicy inside, gone in minutes. 24 minutes of mostly hands-off cooking.

Ingredients

  • Yogurt3 tbsp
  • Garlic3 cloves, crushed
  • Bell Pepper1
  • Olive Oil2 tbsp
  • Red Onion1
  • Squid400 g, rings
  • Smoked Paprika1 tsp
  • Sherry Vinegar1, juiced

Optional extras

  • Fresh Parsleyhandful, to finish

Instructions

    Whisk the yogurt, olive oil, garlic, smoked paprika and sherry vinegar juice into a marinade.

    Cut the squid into even 3 cm chunks and coat well; marinate 30 minutes minimum.

    Thread onto skewers with a little space between pieces so the heat can circulate.

    Grill over high heat, turning every few minutes, until charred at the edges and cooked inside.

  5. 5

    Slide off the skewers, rest 3 minutes, and dust with fresh parsley.

Chef's tip

A final squeeze of sherry vinegar just before serving lifts every other flavour.
