Dusted in flour, fried in nut-brown butter with lemon — meunière, simple perfection. About 33 minutes from fridge to table.

Ingredients
- Butter80 g
- Vegetable Oilfor deep-frying
- Lemon1
- Eggs2, beaten
- Black Peppercorns1 tsp
- All-Purpose Flour100 g
- Breadcrumbs150 g
- Duck600 g, breast

- Tarragonhandful, to finish
Instructions

Pat the duck dry and season with the black peppercorns and a little salt.

Set up a breading line: flour, then beaten egg, then breadcrumbs — press the crumbs on firmly.

Heat 4-5 cm of oil to 180°C; a breadcrumb dropped in should sizzle straight away.

Fry the duck in small batches until deep golden, 3-4 minutes per batch.

Drain on a rack, never on paper, and serve hot with fresh parsley scattered over.
Chef's tip
Keep the oil at a steady 180°C — too cool and the coating goes greasy.
