Cauliflower Meunière

Dusted in flour, fried in nut-brown butter with lemon — meunière, simple perfection. Ready in 23 minutes including prep.

Ingredients

  • Butter80 g
  • Vegetable Oilfor deep-frying
  • Cauliflower1 head
  • Lemon1
  • Eggs2, beaten
  • Black Peppercorns1 tsp
  • All-Purpose Flour100 g
  • Breadcrumbs150 g

Optional extras

  • Tarragonhandful, to finish

Instructions

    Pat the cauliflower dry and season with the black peppercorns and a little salt.

    Set up a breading line: flour, then beaten egg, then breadcrumbs — press the crumbs on firmly.

    Heat 4-5 cm of oil to 180°C; a breadcrumb dropped in should sizzle straight away.

    Fry the cauliflower in small batches until deep golden, 3-4 minutes per batch.

    Drain on a rack, never on paper, and serve hot with fresh parsley scattered over.

Chef's tip

Keep the oil at a steady 180°C — too cool and the coating goes greasy.
