Chicken Vinaigrette

A bright, herb-packed french salad where chicken meets a punchy dressing — fresh, loud and addictive. Ready in 20 minutes including prep.

Ingredients

  • Chicken500 g, thighs
  • Saltto taste
  • Onion1/2, thinly sliced
  • Lemon1, juiced
  • Olive Oil3 tbsp
  • Dijon Mustard1 tsp
  • Red Wine Vinegar2 tbsp
  • Tarragonhandful, torn

Instructions

    Whisk the lemon juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the chicken — slice, shred or cube it so every forkful gets some.

    Toss the chicken with the onion, tarragon and the dressing just before serving.

    Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lemon if it needs lift.
