A bright, herb-packed french salad where duck meets a punchy dressing — fresh, loud and addictive. 20 minutes of mostly hands-off cooking.

Ingredients
- Saltto taste
- Onion1/2, thinly sliced
- Lemon1, juiced
- Olive Oil3 tbsp
- Dijon Mustard1 tsp
- Duck600 g, breast
- Red Wine Vinegar2 tbsp
- Tarragonhandful, torn
Instructions

Whisk the lemon juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the duck — slice, shred or cube it so every forkful gets some.

Toss the duck with the onion, tarragon and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lemon if it needs lift.
Chef's tip
For deeper flavour, toast the black peppercorns in the oil before adding anything wet.
