A bright, herb-packed french salad where white fish meets a punchy dressing — fresh, loud and addictive. About 15 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Onion1/2, thinly sliced
  • Lemon1, juiced
  • Olive Oil3 tbsp
  • Dijon Mustard1 tsp
  • White Fish500 g
  • Red Wine Vinegar2 tbsp
  • Tarragonhandful, torn

Instructions

    Whisk the lemon juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the white fish — slice, shred or cube it so every forkful gets some.

  3. 3

    Toss the white fish with the onion, tarragon and the dressing just before serving.

    Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lemon if it needs lift.

Chef's tip

For deeper flavour, toast the black peppercorns in the oil before adding anything wet.
