Spinach Velouté

Gentle simmered spinach in a fragrant broth, finished with fresh herbs — the french answer to "something light tonight". Ready in 30 minutes including prep.

Ingredients
- Butter1 tbsp
- Heavy Cream150 ml
- Saltto taste
- Spinach300 g
- Onion1, diced
- Garlic3 cloves, minced
- Black Peppercorns1/2 tsp
- Stock or Broth1 litre
- Tarragonsmall handful
- Chicken Stock1 litre
Instructions

Sweat the onion in the Butter until translucent but not browned, about 5 minutes.

Add the garlic and black peppercorns and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the spinach.

Simmer gently until the spinach is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with tarragon and a grind of black pepper.
Chef's tip
For deeper flavour, toast the black peppercorns in the oil before adding anything wet.
