
White Fish Crêpes
Everything good rolled into one: juicy white fish, crisp vegetables and creamy sauce in a soft wrap. 20 minutes of mostly hands-off cooking.
Ingredients
- Yogurt4 tbsp
- Butter1 tbsp
- Saltto taste
- Tomato2, sliced
- Garlic2 cloves, minced
- Eggs3
- Milk400 ml
- All-Purpose Flour200 g
- Flatbread or Tortillas4
- Lettuce1/2, shredded
- White Fish500 g
- Gruyère Cheese100 g
Optional extras
- Tarragonhandful, to finish
Instructions

Season the white fish with the garlic, salt and half the spices, then cook in the Butter until browned and juicy.

Warm the flatbreads in a dry pan until soft and pliable, about 30 seconds a side.

Stir the yogurt with a pinch of salt and a squeeze of lemon for a quick sauce.

Pile the white fish onto each bread with lettuce, tomato and the yogurt sauce.

Roll tightly, wrap the bottom half in paper, and eat while the filling is still warm.
