Cauliflower Crêpes

Everything good rolled into one: juicy cauliflower, crisp vegetables and creamy sauce in a soft wrap. 23 minutes of mostly hands-off cooking.

Ingredients

  • Yogurt4 tbsp
  • Butter1 tbsp
  • Saltto taste
  • Tomato2, sliced
  • Garlic2 cloves, minced
  • Cauliflower1 head
  • Eggs3
  • Milk400 ml
  • All-Purpose Flour200 g
  • Flatbread or Tortillas4
  • Lettuce1/2, shredded
  • Gruyère Cheese100 g

Optional extras

  • Tarragonhandful, to finish

Instructions

    Season the cauliflower with the garlic, salt and half the spices, then cook in the Butter until browned and juicy.

    Warm the flatbreads in a dry pan until soft and pliable, about 30 seconds a side.

    Stir the yogurt with a pinch of salt and a squeeze of lemon for a quick sauce.

    Pile the cauliflower onto each bread with lettuce, tomato and the yogurt sauce.

    Roll tightly, wrap the bottom half in paper, and eat while the filling is still warm.

Chef's tip

Let the dish rest 5 minutes off the heat before serving so the flavours settle.
