Louisiana gumbo — pork ribs in a dark-roux stew with the holy trinity. About 60 minutes from fridge to table.

Ingredients
- Butter2 tbsp
- Saltto taste
- Onion2, chopped
- Garlic4 cloves, minced
- Potato3 medium, cubed
- Carrot2, thickly sliced
- Okra200 g
- Stock or Broth750 ml
- Pork Ribs800 g
- Smoked Paprika1 tsp
- Andouille Sausage200 g
- Cajun Seasoning2 tbsp
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Warm the Butter in a heavy casserole and brown the pork ribs well on all sides — real colour means real flavour.

Lift the pork ribs out, soften the onion and garlic in the same pot, then add the smoked paprika.

Return the pork ribs, tip in the potato and carrot, and pour over the stock.

Cover and let it murmur gently for 35-40 minutes until everything is spoon-tender and the broth has body.

Season with salt and cracked pepper, then shower with fresh parsley right before serving.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
