Louisiana gumbo — lobster in a dark-roux stew with the holy trinity. About 47 minutes from fridge to table.

Ingredients
- Butter2 tbsp
- Saltto taste
- Onion2, chopped
- Garlic4 cloves, minced
- Potato3 medium, cubed
- Carrot2, thickly sliced
- Okra200 g
- Stock or Broth750 ml
- Smoked Paprika1 tsp
- Lobster2 tails
- Andouille Sausage200 g
- Cajun Seasoning2 tbsp
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Warm the Butter in a heavy casserole and brown the lobster well on all sides — real colour means real flavour.

Lift the lobster out, soften the onion and garlic in the same pot, then add the smoked paprika.

Return the lobster, tip in the potato and carrot, and pour over the stock.

Cover and let it murmur gently for 35-40 minutes until everything is spoon-tender and the broth has body.

Season with salt and cracked pepper, then shower with fresh parsley right before serving.
