Louisiana gumbo — jackfruit in a dark-roux stew with the holy trinity. About 50 minutes from fridge to table.

Ingredients
- Butter2 tbsp
- Saltto taste
- Onion2, chopped
- Garlic4 cloves, minced
- Potato3 medium, cubed
- Carrot2, thickly sliced
- Okra200 g
- Stock or Broth750 ml
- Jackfruit2 cans
- Smoked Paprika1 tsp
- Andouille Sausage200 g
- Cajun Seasoning2 tbsp
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Warm the Butter in a heavy casserole and brown the jackfruit well on all sides — real colour means real flavour.

Lift the jackfruit out, soften the onion and garlic in the same pot, then add the smoked paprika.

Return the jackfruit, tip in the potato and carrot, and pour over the stock.

Cover and let it murmur gently for 35-40 minutes until everything is spoon-tender and the broth has body.

Season with salt and cracked pepper, then shower with fresh parsley right before serving.
Chef's tip
A final squeeze of lemon just before serving lifts every other flavour.
