Ingredients
- Yogurt4 tbsp
- Butter1 tbsp
- Saltto taste
- Tomato2, sliced
- Garlic2 cloves, minced
- Bacon8 slices
- Mayonnaise4 tbsp
- Flatbread or Tortillas4
- Lettuce1/2, shredded
- Salmon500 g
- Toast Bread9 slices
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Season the salmon with the garlic, salt and half the spices, then cook in the Butter until browned and juicy.

Warm the flatbreads in a dry pan until soft and pliable, about 30 seconds a side.

Stir the yogurt with a pinch of salt and a squeeze of lemon for a quick sauce.

Pile the salmon onto each bread with lettuce, tomato and the yogurt sauce.

Roll tightly, wrap the bottom half in paper, and eat while the filling is still warm.
Chef's tip
A final squeeze of lemon just before serving lifts every other flavour.
