Crisp-edged patties of potato with a soft heart — pan-fried and made for dipping. 22 minutes of mostly hands-off cooking.

Ingredients
- Butter3 tbsp, for frying
- Onion1 small, grated
- Potato4 large
- Eggs1, beaten
- Cheddar Cheese8 slices
- Breadcrumbs80 g
- Smoked Paprika1 tsp
- Pickles16 slices
- Slider Buns8
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Chop or mash the potato finely, then mix with the breadcrumbs, egg, grated onion and smoked paprika.

Season generously, then shape into 8 small patties with wet hands.

Chill for 15 minutes so they hold their shape in the pan.

Shallow-fry in the Butter over medium heat for 3-4 minutes a side until crusty and cooked through.

Drain briefly and serve with yogurt, fresh parsley and wedges of lemon.
