A crunchy shell gives way to tender white fish — the american street-snack everyone fights over. Ready in 20 minutes including prep.

Ingredients

  • Vegetable Oilfor deep-frying
  • Eggs2, beaten
  • All-Purpose Flour100 g
  • Flour Tortillas6
  • Breadcrumbs150 g
  • White Fish500 g
  • Smoked Paprika1 tsp
  • Monterey Jack Cheese200 g

Optional extras

  • Fresh Parsleyhandful, to finish

Instructions

    Pat the white fish dry and season with the smoked paprika and a little salt.

    Set up a breading line: flour, then beaten egg, then breadcrumbs — press the crumbs on firmly.

    Heat 4-5 cm of oil to 180°C; a breadcrumb dropped in should sizzle straight away.

    Fry the white fish in small batches until deep golden, 3-4 minutes per batch.

    Drain on a rack, never on paper, and serve hot with chives scattered over.

Chef's tip

Keep the oil at a steady 180°C — too cool and the coating goes greasy.
