
Jackfruit Hash
Skillet cooking, American-style: a screaming cast-iron pan, Jackfruit crusted hard in butter and oil, and a quick pan sauce built from the drippings. Hearty, fast and full of flavour.
Ingredients
- Butter2 tbsp
- Saltto taste
- Garlic4 cloves, minced
- Potato4, diced
- Bell Pepper1, sliced
- Eggs4, fried
- Spring Onions3, cut into batons
- Jackfruit2 cans
- Ketchup2 tbsp
- Smoked Paprika1 tsp
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Preheat a cast-iron skillet over medium-high heat until it just starts to smoke; add the oil.

Season the Eggs generously on both sides and sear undisturbed until a deep crust forms, about three minutes.

Flip and add the butter, basting as it foams with Jackfruit for another two to three minutes.

Move the Eggs to a plate and soften Garlic in the pan drippings, scraping the crusty bits loose.

Deglaze with a splash of stock or water and reduce to a quick pan sauce, seasoning to taste.

Rest the Eggs, then serve smothered in the pan sauce with the buttery drippings pooled over.
Chef's tip
A final squeeze of lemon just before serving lifts every other flavour.
