
Crab Stir-Fry
High heat, big flavour: crab seared with aromatics and a shiny sauce that clings to every bite. 14 minutes of mostly hands-off cooking.
Ingredients
- Butter2 tbsp
- Saltto taste
- Garlic4 cloves, minced
- Bell Pepper1, sliced
- Spring Onions3, cut into batons
- Soy Sauce2 tbsp
- Broccoli200 g
- Ketchup2 tbsp
- Smoked Paprika1 tsp
- Crab400 g, lump
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Preheat a cast-iron skillet over medium-high heat until it just starts to smoke; add the oil.

Season the Crab generously on both sides and sear undisturbed until a deep crust forms, about three minutes.

Flip and add the butter, basting as it foams with Garlic for another two to three minutes.

Move the Crab to a plate and soften Smoked Paprika in the pan drippings, scraping the crusty bits loose.

Deglaze with a splash of stock or water and reduce to a quick pan sauce, seasoning to taste.

Rest the Crab, then serve smothered in the pan sauce with the buttery drippings pooled over.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
