Jackfruit Stir-Fry
Skillet cooking, American-style: a screaming cast-iron pan, Jackfruit crusted hard in butter and oil, and a quick pan sauce built from the drippings. Hearty, fast and full of flavour.

- Saltto taste
- Garlic4 cloves, minced
- Bell Pepper1, sliced
- Spring Onions3, cut into batons
- Soy Sauce2 tbsp
- Broccoli200 g
- Jackfruit2 cans
- Ketchup2 tbsp
- Smoked Paprika1 tsp
Optional extras
- Fresh Parsleyhandful, to finish
Instructions
- 1
Preheat a cast-iron skillet over medium-high heat until it just starts to smoke; add the oil.
- 2
Season the Jackfruit generously on both sides and sear undisturbed until a deep crust forms, about three minutes.
- 3
Flip and add the butter, basting as it foams with Garlic for another two to three minutes.
- 4
Move the Jackfruit to a plate and soften Smoked Paprika in the pan drippings, scraping the crusty bits loose.
- 5
Deglaze with a splash of stock or water and reduce to a quick pan sauce, seasoning to taste.
- 6
Rest the Jackfruit, then serve smothered in the pan sauce with the buttery drippings pooled over.
Chef's tip
A final squeeze of lemon just before serving lifts every other flavour.
