Ingredients

  • Onion1/2, thinly sliced
  • Lemon1, juiced
  • Olive Oil3 tbsp
  • Eggs2
  • Bacon6 slices
  • Avocado1
  • Fresh Parsleyhandful, torn
  • Iceberg Lettuce1
  • Pork Ribs800 g
  • Blue Cheese80 g

Instructions

    Whisk the lemon juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the pork ribs — slice, shred or cube it so every forkful gets some.

    Toss the pork ribs with the onion, fresh parsley and the dressing just before serving.

    Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lemon if it needs lift.

Chef's tip

For deeper flavour, toast the smoked paprika in the oil before adding anything wet.
