Authentic jerk snapper — allspice, thyme and scotch bonnet charred over smoky heat. About 19 minutes from fridge to table.

Ingredients
- Salt1 tsp
- Garlic3 cloves, crushed
- Lime1, juiced
- Coconut Oil2 tbsp
- Allspice1 tsp
- Jerk Seasoning3 tbsp
- Scotch Bonnet Pepper1
- Snapper2 whole
Optional extras
- Fresh Thymehandful, to finish
Instructions

Whisk the Coconut Oil, lime juice, garlic, allspice and salt into a quick marinade.

Coat the snapper completely and let it sit for at least 20 minutes (overnight is even better).

Get the grill or griddle pan screaming hot.

Grill the snapper in a single layer, turning once, until charred in spots and cooked through.

Rest for 5 minutes, then finish with fresh thyme and extra lime.
Chef's tip
Don't move the snapper for the first 3 minutes; a proper crust releases itself.
