Corn Jerk

Authentic jerk corn — allspice, thyme and scotch bonnet charred over smoky heat. 22 minutes of mostly hands-off cooking.

Ingredients

  • Salt1 tsp
  • Garlic3 cloves, crushed
  • Lime1, juiced
  • Corn400 g
  • Coconut Oil2 tbsp
  • Allspice1 tsp
  • Jerk Seasoning3 tbsp
  • Scotch Bonnet Pepper1

Optional extras

  • Fresh Thymehandful, to finish

Instructions

    Whisk the Coconut Oil, lime juice, garlic, allspice and salt into a quick marinade.

    Coat the corn completely and let it sit for at least 20 minutes (overnight is even better).

    Get the grill or griddle pan screaming hot.

  4. 4

    Grill the corn in a single layer, turning once, until charred in spots and cooked through.

  5. 5

    Rest for 5 minutes, then finish with fresh thyme and extra lime.

Chef's tip

Don't move the corn for the first 3 minutes; a proper crust releases itself.
