Plantain Curry
A soul-warming caribbean curry where plantain simmers in a deeply spiced sauce — comfort food built for sharing with warm flatbread or rice. 32 minutes of mostly hands-off cooking.
Ingredients
- Saltto taste
- Onion1 large, finely chopped
- Garlic4 cloves, minced
- Potato3, cubed
- Dried Thyme1/2 tsp
- Coconut Milk400 g
- Coconut Oil2 tbsp
- Curry Powder2 tbsp
- Allspice1 tsp
- Scotch Bonnet Pepper1 tsp
- Plantain4 ripe
Optional extras
- Fresh Thymehandful, to finish
Instructions

Heat the Coconut Oil in a heavy-bottomed pot over medium heat until shimmering.

Add the onion and cook until golden and softened, 6-8 minutes, stirring so it doesn't catch.

Stir in the garlic plus the allspice, scotch bonnet pepper and dried thyme; toast for about a minute until the kitchen smells incredible.

Add the plantain, turning every piece through the spice base so it's fully coated, and sear lightly.

Pour in the coconut milk, bring to a gentle bubble, then cover and simmer until the plantain is tender.

Uncover and reduce until the sauce clings to a spoon. Finish with fresh thyme and a squeeze of lime.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
