
Saltfish Brown Stew
Browned-sugar stew — saltfish deepened by caramel and thyme, island style. Ready in 47 minutes including prep.
Ingredients
- Saltto taste
- Onion2, chopped
- Tomato3
- Garlic4 cloves, minced
- Potato3 medium, cubed
- Bell Pepper1
- Carrot2, thickly sliced
- Stock or Broth750 ml
- Coconut Oil2 tbsp
- Brown Sugar2 tbsp
- Allspice1 tsp
- Saltfish400 g, soaked
Optional extras
- Fresh Thymehandful, to finish

Warm the Coconut Oil in a heavy casserole and brown the saltfish well on all sides — real colour means real flavour.

Lift the saltfish out, soften the onion and garlic in the same pot, then add the allspice.

Return the saltfish, tip in the potato and carrot, and pour over the stock.

Cover and let it murmur gently for 35-40 minutes until everything is spoon-tender and the broth has body.

Season with salt and cracked pepper, then shower with fresh thyme right before serving.
Chef's tip
For deeper flavour, toast the allspice in the oil before adding anything wet.
