
Chickpeas Brown Stew
Browned-sugar stew — chickpeas deepened by caramel and thyme, island style. Ready in 63 minutes including prep.
Ingredients
- Saltto taste
- Onion2, chopped
- Tomato3
- Garlic4 cloves, minced
- Chickpeas2 cans
- Potato3 medium, cubed
- Bell Pepper1
- Carrot2, thickly sliced
- Stock or Broth750 ml
- Coconut Oil2 tbsp
- Brown Sugar2 tbsp
- Allspice1 tsp

- Fresh Thymehandful, to finish
Instructions

Warm the Coconut Oil in a heavy casserole and brown the chickpeas well on all sides — real colour means real flavour.

Lift the chickpeas out, soften the onion and garlic in the same pot, then add the allspice.

Return the chickpeas, tip in the potato and carrot, and pour over the stock.

Cover and let it murmur gently for 35-40 minutes until everything is spoon-tender and the broth has body.

Season with salt and cracked pepper, then shower with fresh thyme right before serving.
