A clear, restorative caribbean soup starring goat — light on the palate, big on aroma. Ready in 40 minutes including prep.

Ingredients
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Stock or Broth1 litre
- Coconut Oil1 tbsp
- Allspice1/2 tsp
- Fresh Thymesmall handful
- Goat600 g, cubed
- Yam300 g
- Dumplings100 g
Instructions

Sweat the onion in the Coconut Oil until translucent but not browned, about 5 minutes.

Add the garlic and allspice and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the goat.

Simmer gently until the goat is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh thyme and a grind of black pepper.
