A clear, restorative caribbean soup starring snapper — light on the palate, big on aroma. 27 minutes of mostly hands-off cooking.

Ingredients
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Stock or Broth1 litre
- Pumpkin200 g
- Coconut Oil1 tbsp
- Allspice1/2 tsp
- Fresh Thymesmall handful
- Snapper2 whole
- Green Banana2
Instructions

Sweat the onion in the Coconut Oil until translucent but not browned, about 5 minutes.

Add the garlic and allspice and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the snapper.

Simmer gently until the snapper is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh thyme and a grind of black pepper.
