Delicately steamed white fish with aromatics poured over at the table — pure, clean caribbean flavour. 22 minutes of mostly hands-off cooking.

Ingredients
- Garlic3 cloves, sliced
- Ginger4 slices
- Spring Onions3, shredded
- Lime1
- Coconut Milk2 tbsp
- Okra150 g
- White Fish500 g
- Coconut Oil1 tbsp
- Fresh Thyme1 tbsp
Instructions

Set up a steamer over simmering water and line the tray with the ginger slices.

Lay the white fish in a single layer, scatter over the garlic, and season lightly.

Steam until just cooked through — translucent and silky rather than dry.

Transfer to a warm plate, pour over the coconut milk, and top with spring onions.

Heat the Coconut Oil until it just smokes and pour it sizzling over everything at the table.
Chef's tip
For deeper flavour, toast the allspice in the oil before adding anything wet.
