Beef with Fried Plantain
High heat, big flavour: beef seared with aromatics and a shiny sauce that clings to every bite. About 27 minutes from fridge to table.
Ingredients
- Saltto taste
- Garlic4 cloves, minced
- Bell Pepper1, sliced
- Spring Onions3, cut into batons
- Coconut Milk2 tbsp
- Beef500 g
- Coconut Oil2 tbsp
- Allspice1 tsp
- Plantain2 ripe, fried
Optional extras
- Fresh Thymehandful, to finish
Instructions

Season the Beef the night before if you can — green seasoning, salt, a scatter of scotch bonnet — and let it marinate.

Heat the oil in a heavy pot and burn the sugar to a dark caramel (careful: dark brown, not black) for the authentic stew base.

Add the Beef immediately and turn to coat in the burnt sugar, searing until sealed.

Add Coconut Oil and Garlic with the herbs and a splash of water, scraping the pot base.

Cover and simmer on a low flame until the Beef is tender and the sauce has reduced and darkened.

Serve hot with rice and peas, with the thick sauce spooned over everything.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
