
Snapper with Fried Plantain
One-pot Caribbean stew — browned Snapper, a whole scotch bonnet for perfume, thyme and allspice, and a slow simmer that fills the kitchen with the smell of a Sunday lime.
Ingredients
- Saltto taste
- Garlic4 cloves, minced
- Bell Pepper1, sliced
- Spring Onions3, cut into batons
- Coconut Milk2 tbsp
- Coconut Oil2 tbsp
- Allspice1 tsp
- Snapper2 whole
- Plantain2 ripe, fried
Optional extras
- Fresh Thymehandful, to finish
Instructions

Warm the oil in a heavy pot and soften the onion, garlic and pepper until sweet and translucent.

Add the Snapper and sear until browned at the edges.

Stir in Coconut Oil and Garlic with the allspice, thyme and a whole scotch bonnet left whole for perfume without fire.

Add the liquids, cover, and simmer gently until the Snapper is done and the pot is fragrant.

Uncover for the last ten minutes to reduce the sauce to a glossy finish.

Taste for salt and lime, and serve with rice, ground provisions, or fried plantain.

A final squeeze of lime just before serving lifts every other flavour.
