White Fish with Fried Plantain

Island technique: White Fish marinated in green seasoning, kissed with burnt-sugar caramel, then stewed low with thyme and allspice until the sauce turns dark and glossy. Rice and peas alongside.

Ingredients

  • Saltto taste
  • Garlic4 cloves, minced
  • Bell Pepper1, sliced
  • Spring Onions3, cut into batons
  • Coconut Milk2 tbsp
  • White Fish500 g
  • Coconut Oil2 tbsp
  • Allspice1 tsp
  • Plantain2 ripe, fried

Optional extras

  • Fresh Thymehandful, to finish

Instructions

    Season the White Fish the night before if you can — green seasoning, salt, a scatter of scotch bonnet — and let it marinate.

    Heat the oil in a heavy pot and burn the sugar to a dark caramel (careful: dark brown, not black) for the authentic stew base.

    Add the White Fish immediately and turn to coat in the burnt sugar, searing until sealed.

    Add Coconut Oil and Garlic with the herbs and a splash of water, scraping the pot base.

    Cover and simmer on a low flame until the White Fish is tender and the sauce has reduced and darkened.

    Serve hot with rice and peas, with the thick sauce spooned over everything.

Chef's tip

For deeper flavour, toast the allspice in the oil before adding anything wet.
