- Fresh Cilantro1 handful
- Olive Oil3 tbsp
- Lime1, juiced
- Fresh Thymehandful, torn
- Goat600 g, cubed

Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the goat — slice, shred or cube it so every forkful gets some.

Toss the goat with the onion, fresh thyme and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
