A bright, herb-packed caribbean salad where snapper meets a punchy dressing — fresh, loud and addictive. Ready in 15 minutes including prep.

Ingredients

- Onion1/2, thinly sliced
- Fresh Cilantro1 handful
- Olive Oil3 tbsp
- Lime1, juiced
- Fresh Thymehandful, torn
- Snapper2 whole
- Mango1
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the snapper — slice, shred or cube it so every forkful gets some.

Toss the snapper with the onion, fresh thyme and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
