A bright, herb-packed caribbean salad where saltfish meets a punchy dressing — fresh, loud and addictive. About 15 minutes from fridge to table.

Ingredients
- Saltto taste
- Onion1/2, thinly sliced
- Fresh Cilantro1 handful
- Olive Oil3 tbsp
- Lime1, juiced
- Red Onion1/2
- Fresh Thymehandful, torn
- Saltfish400 g, soaked
- Mango2, diced
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the saltfish — slice, shred or cube it so every forkful gets some.

Toss the saltfish with the onion, fresh thyme and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.

Let the dish rest 5 minutes off the heat before serving so the flavours settle.
