Cassava Mango Salsa

A bright, herb-packed caribbean salad where cassava meets a punchy dressing — fresh, loud and addictive. 15 minutes of mostly hands-off cooking.

Ingredients

  • Saltto taste
  • Onion1/2, thinly sliced
  • Fresh Cilantro1 handful
  • Olive Oil3 tbsp
  • Lime1, juiced
  • Red Onion1/2
  • Fresh Thymehandful, torn
  • Cassava600 g
  • Mango2, diced

Instructions

    Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the cassava — slice, shred or cube it so every forkful gets some.

    Toss the cassava with the onion, fresh thyme and the dressing just before serving.

    Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.

Chef's tip

Taste and adjust the salt at the end; sauces concentrate as they reduce.
