Warm bread wrapped around savoury cassava, crunchy salad and a cool sauce — handheld happiness. 23 minutes of mostly hands-off cooking.

Ingredients
- Yogurt4 tbsp
- Saltto taste
- Tomato2, sliced
- Garlic2 cloves, minced
- Tamarind Paste2 tbsp
- Cucumber1
- Flatbread or Tortillas4
- Lettuce1/2, shredded
- Coconut Oil1 tbsp
- Cassava600 g
- Fried Bakes6
Optional extras
- Fresh Thymehandful, to finish
Instructions

Season the cassava with the garlic, salt and half the spices, then cook in the Coconut Oil until browned and juicy.

Warm the flatbreads in a dry pan until soft and pliable, about 30 seconds a side.

Stir the yogurt with a pinch of salt and a squeeze of lime for a quick sauce.

Pile the cassava onto each bread with lettuce, tomato and the yogurt sauce.

Roll tightly, wrap the bottom half in paper, and eat while the filling is still warm.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
