Plantain Stroganoff

High heat, big flavour: plantain seared with aromatics and a shiny sauce that clings to every bite. 17 minutes of mostly hands-off cooking.

Ingredients

  • Heavy Cream250 ml
  • Saltto taste
  • Garlic4 cloves, minced
  • Bell Pepper1, sliced
  • Tomato Sauce300 ml
  • Mushrooms200 g
  • Spring Onions3, cut into batons
  • Coconut Milk2 tbsp
  • Smoked Paprika1 tsp
  • Plantain4
  • Palm Oil2 tbsp

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Start a refogado: onion and garlic cooked slowly in oil until translucent and sweet.

  2. 2

    Brown the Plantain in the pan, letting it take real colour.

  3. 3

    Add Palm Oil and Garlic, softening them into the base.

  4. 4

    Season, add liquid to come a third of the way up, and simmer covered until tender.

  5. 5

    Uncover and reduce until the sauce is spoon-coating and bright.

  6. 6

    Finish with coriander and lime, and serve hot with rice and beans.

Chef's tip

For deeper flavour, toast the smoked paprika in the oil before adding anything wet.
