Breaded black beans under tomato sauce and a blanket of molten cheese — bife à parmegiana. 36 minutes of mostly hands-off cooking.

Ingredients
- Vegetable Oilfor deep-frying
- Mozzarella Cheese200 g
- Tomato Sauce400 ml
- Eggs2, beaten
- All-Purpose Flour100 g
- Breadcrumbs150 g
- Black Beans2 cans
- Smoked Paprika1 tsp
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Pat the black beans dry and season with the smoked paprika and a little salt.

Set up a breading line: flour, then beaten egg, then breadcrumbs — press the crumbs on firmly.

Heat 4-5 cm of oil to 180°C; a breadcrumb dropped in should sizzle straight away.

Fry the black beans in small batches until deep golden, 3-4 minutes per batch.

Drain on a rack, never on paper, and serve hot with green onions scattered over.
Chef's tip
Keep the oil at a steady 180°C — too cool and the coating goes greasy.
